During my time at Good One in 2022 a major project I assisted the team with was the research and development process for Hotel Sorrento's new restaurant Shi Hui Shi. This exploration process was in-depth and adventurous, trying Cantonese restaurants across Melbourne city, getting a feel for food, ambiance, branding, aesthetics and how a good dining space functions. Alongside the extensive research I had a hand at brainstorming ideas and my idea was chosen which is now the text in their main logo.

Creating a brand and turning the space into an intimate, sensory, booked-out Cantonese dining experience. Shihuishi, meaning limestone in Cantonese, takes its name from the history and architecture of Hotel Sorrento. As the brand evolved, we looked at 1960s Cantonese eateries and the cinemat- ic and photographic works of cultural classics, Wong Kar Wai and Fan Ho. Over a rigorous process of research and exploration, we worked to name, define and design Hotel Sorrento’s Shihuishi. Within the limestone walls, past and present collide. Shihuishi is a brand and space that, at once, aligns with the existing Hotel Sorrento’s branding and stretches into a new, faraway place. "
